Soak gizzards in buttermilk for at least 2 hours or overnight.
In a large bowl, combine flour, paprika, garlic powder, cayenne, salt, and pepper.
Heat oil to 350°F in a deep fryer or heavy pot.
Drain gizzards and dredge in seasoned flour, shaking off excess.
Fry in batches 15-18 minutes until golden brown and crispy.
Drain on paper towels and serve hot with hot sauce or ranch.
