Ingredients
Shop- 2 cans (28 oz each) crushed tomatoes
- 1 onion, diced
- 4 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1/4 cup butter
- 2 tablespoons sugar
- 1 cup fresh basil leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Parmesan cheese for serving
Instructions
Melt butter in large pot and sauté onion until soft.
Add garlic and cook 1 minute.
Add tomatoes, broth, sugar, salt, and pepper.
Bring to boil, then simmer 20 minutes.
Add basil and simmer 5 more minutes.
Use immersion blender to puree until smooth (or blend in batches).
Stir in heavy cream and heat through.
Adjust seasoning to taste.
Serve with grated Parmesan and fresh basil.
Chef's Comfy Tip
Add the cream at the end and don't let it boil after - this keeps the soup from curdling and maintains that silky texture.
