Remove tough stems from collards and chop leaves into 2-inch pieces.
Place ham hock, onion, and garlic in large pot with broth.
Bring to boil, then simmer 1 hour.
Add collard greens in batches, stirring as they wilt.
Add vinegar, sugar, and red pepper flakes.
Simmer 1-2 hours until greens are very tender.
Remove ham hock, shred meat, and return to pot.
Season with salt and pepper.
Serve with hot sauce and pot liquor.

The longer you cook collards, the more tender they get - some folks simmer them for 3-4 hours for that melt-in-your-mouth texture.
