In a large heavy saucepan, combine sugar, buttermilk, baking soda, and salt.
Bring to a boil over medium heat, stirring constantly. The mixture will foam up.
Continue cooking, stirring frequently, until mixture reaches 236°F (soft ball stage).
Remove from heat and stir in butter, pecans, and vanilla.
