Ingredients

  • 1 1/2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cayenne pepper
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1/4 cup onion, finely diced
  • Vegetable oil for frying

Instructions

In a large bowl, whisk together cornmeal, flour, baking powder, salt, baking soda, and cayenne.

In another bowl, combine buttermilk, egg, and onion.

Pour wet ingredients into dry and stir until just combined. Let batter rest 10 minutes.

Heat oil to 375°F in a deep fryer or heavy pot.

Drop batter by rounded tablespoons into hot oil, frying 6-8 at a time.

Fry 2-3 minutes until golden brown, turning once.

Drain on paper towels and serve hot.

Use two spoons to drop the batter - one to scoop, one to push it off into the oil.
