Ingredients
Shop- 4 slices bacon, chopped
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cups fresh or frozen butter beans
- 2 cups corn kernels
- 2 large tomatoes, diced
- 1 cup chicken broth
- 2 tablespoons butter
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 tablespoons fresh basil, chopped
Instructions
Cook bacon in a large skillet until crispy. Remove and set aside, leaving drippings.
Sauté onion and bell pepper in bacon drippings for 5 minutes.
Add butter beans and chicken broth. Cover and simmer 10 minutes.
Add corn, tomatoes, butter, and sugar. Cook uncovered 5-7 minutes.
Season with salt and pepper. Stir in reserved bacon and fresh basil.
Serve hot as a side dish.
