Ingredients
Shop- 1 large cucumber, peeled and seeded
- 8 oz cream cheese, softened
- 1 small onion, grated
- 2 tablespoons mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- Few drops green food coloring (optional)
- Fresh dill for garnish
Instructions
Grate cucumber and squeeze out excess moisture.
Beat cream cheese until fluffy.
Mix in cucumber, onion, mayonnaise, salt, and pepper.
Add food coloring if desired for pale green color.
Refrigerate at least 2 hours.
Serve with crackers or as a sandwich spread.
Garnish with fresh dill.

Really squeeze that cucumber dry - excess moisture will make the spread watery instead of creamy.
